How Freeze Dried Coffee is MadeFreeze dried coffee is instant coffee and is also called soluble coffee or coffee powder. It is a beverage derived from brewed coffee beans that have been either freeze-dried or spray dried. Most instant coffee is commercially prepared by either of these methods, which can be rehydrated later. The first instant coffee was invented in 1901 by Satori Kato, a Japanese scientist working in Chicago. Some say Kato introduced the powdered substance even earlier in the early 1880s in Buffalo, New York, at the Pan-American Exposition. George Constant Louis Washington, an American inventor and businessman, developed his own instant coffee process shortly thereafter, and first marketed it commercially in 1910. The Nescafé brand, derived from Nestle and café, was developed after seven or eight years by Max Morgenthaler. It was introduced after a more advanced coffee refining process and was launched on April 1, 1938. High-vacuum freeze-dried coffee was developed shortly after World War II, as an indirect result of wartime research into other areas. Today, coffee beans are commercially roasted to bring out the flavor and aroma. Rotating cylcinders is where beans and combustion gases are used and at 325 °F the poping sounds of roasting begin. Depending on the roast desired it takes from eight to fifteen minutes for the entire roasting process with about 25-75% efficiency. The coffee roasting process using a fluidized bed only takes from thirty seconds to four minutes; and, it operates at lower temperatures that allows greater retention of the coffee bean aroma and flavor. The beans are then finely ground by sets of scored rollers that crush the beans into .020 to 0.043 inch pieces in order to allow the coffee to be put in solution with water called extraction for the drying stage. In perculation columns at temperatures of 308° to 350 °F this concentrates the coffee solution to about 15-30% coffee by mass. The solution may be further concentrated before the drying process begins by either vacuum evaporation or freeze concentration. This freeze-drying, also known as lyophilisation, lyophilization or cryodesiccation, is a dehydration process where coffee in this instance is frozen and then the water is removed by sublimation. One obvious difference that can be seen is in the types of coffee maker such as French press, vacuum, drip coffee maker, pre-heated water, espresso maker, percolator and urn. Other obvious differences can be seen in size by the number of cups of coffee they make at a time. Not only the maximum, but the various amounts of coffee they will make at a time. One last obvious difference is what the coffee is brewed into. These include one that has an internal thermal holding area such as in a brew station where coffee is poured by pressing a lever so coffee goes into a cup, carafe of some kind or a thermal container of some kind. French press coffee makers require hot water from a separate source while a vacpot, which is called a siphon brewer or vacuum brewed coffee that uses hot or cold water depending how one wants to use it. Another that requires hot water may not be considered a coffee maker, but the coffee dripper that has a filter in it and sits on your coffee cup or mug does make coffee. The most common coffee maker is a drip coffee maker. This is true whether it is a pour over where hot water is poured over the grounds or hot water is pumped up from a side source and allowed spray water over the grounds. These coffee makers have two shapes of filters known as the cone and the basket shape that has more drip area. Some drip coffee makers offer a low electric heated hot plate while others offer radiant heat. Drip makers come in closed, sealed and open coffee dispensing. Closed and sealed dispensing systems often close off the flavor and aroma while the coffee is being made. Those that pre-heat the water include Bunn coffee makers. These coffee makers are great when you need another pot of coffee in a hurry. Some offer a fresh 12 cups of coffee in as little as 2.5 or 3 minutes. Another advantage of this type of coffee maker, which is claimed by many, is that the preheated water makes a much better tasting cup of coffee. Espresso coffee machines make coffee under a pressure system that is usually at 15 bar of pressure. Note here, there are other coffee machines that make coffee under pressure, but true espresso machines are at 15 bar. The coffee grounds are much finer than regular coffee thus a thicker liquid is produced by the steam that is driven through the coffee. Espresso machines also appear different and work differently as well. A manual pump machine is just that a manual machine where you do every step. A semi automatic does some of the process and can be set on how to them. The super automatic is fully automatic. It will make different kinds of espresso that you can select, it will then grind the coffee to your specifications and brew your selection the number of times you want it made. Some super automatics allow you to make different selections of espressos at the touch of a button. Percolators and Urns are also different in appearance, but make coffee the same way. Cold water is put in the bottom and heat is applied to the water. Once these makers are turned on the water begins to heat and be pumped up through a tube that ends above the coffee basket. Some makers wait for the water in the bottom to heat some before the perking process begins. When the perking has finished the coffee is ready to drink piping hot. Many feel this is real coffee as it is usually a stronger tasting coffee than other methods. The unseen differences are in the way the coffee maker is made. Does it have more plastic than others, is it programmable or digital and how much does it cost. Other unseen differences are in warranties, how the coffee taste and the wattage it will use to make the coffee. Whether it is a single coffee maker, a pod maker, or a multi-cup coffee maker, percolator, urn or espresso machine they all make coffee, but how well and for how long often remain the greatest unseen differences of all. Cheap Coffee Makers to Help You Get Your Caffeine FixCheap most often refers to a low cost; it can also relate to cheap quality. When you say cheap, it can also mean both cheap in cost and cheap in quality. However, most coffee makers made today are made to last longer than one year and yet come with a limited warranty for one year. This length of a one year warranty often relates to a cheap maker; yet, some say these with a limited warranty will last just beyond a year and with their low cost are looked on as cheap. If you want a cheap one that is low in price and has a one year limited warranty, a bit of research through consumer reviews for these may lead to one that may be cheap in price, but will actually last a good number of years. One of the interesting points about many people who buy what they consider to be an inexpensive coffee maker is that they do not bother to fill out and send in the registration card that comes with it. Unless you send in the registration card, your warranty becomes null and void as the company does not have any way of knowing when you bought it. If, however, you have saved the original sales slip for that specific maker and the specific date is clearly marked when you bought it, some companies will honor their warranty. Those who did neither often remark: it was a cheap one anyway. So what is considered a cheap coffee maker when talking about the price? There are many that are less than twenty dollars. But when you type in cheap coffee makers on the internet, you will find coffee makers that cost all the way up to almost two hundred dollars. This is, of course, an advertising statement that prices for the ones advertised are supposedly at a cheaper price; that is, below the cost that many other companies are asking for the same ones. If you are interested in these, note the statements in the last paragraph. All these points of view from sellers and buyers are made so people can get their morning caffeine fix. Whether you drink just one cup of coffee in the morning or brew twelve cups of coffee for two people, the need for a new coffee maker you will most likely cause you to look for one with a cheaper price no matter the cost. You may also look for one that has a longer warranty. However, the best advice is to look at your needs for the amount of coffee you will be making on a regular basis and the kind of coffee maker that fits your life style. Low Acid and Acid Free CoffeeThere is a great request for low acid and acid free coffee. This is due to people who say they have extreme reactions to the acid in coffee. And, this condition makes it necessary for them to stop drinking coffee all together or find another recourse. Both low acid and acid free coffee have seemed to save the day for many; especially for their morning cup of coffee. But, are low acid and acid free coffee the only answer? According to Brainiac, low acid coffee is made by cold brewing, and can be safely consumed by sufferers of acid reflux or gastrointestinal problems caused by drinking heat brewed coffee. The process reduces up to 67% of the acid, and doesn't affect the taste or aroma. Make enough coffee to create a concentrate that can be stored in the refrigerator for up to two weeks before discarding. They suggest Arabica coffees that are grown in the low lands of Sumatra, Brazil and Indonesia that naturally have less acid. Some dark roast coffees are also said to have less acid than lighter roasts. But, what about those who have other side effects from drinking coffee. These side effects include iron deficiency anemia and extreme heartburn, while others claim side effects as bad as chronic life threatening illnesses. Consumption of low acid coffee has been proven to be much healthier than regular coffee for many people. Despite these findings, research has not been able to prove that the acidity in coffee causes extreme reactions such as heartburn, acid reflux and indigestion. Is commercially made acid free coffee better? Commercially made acid free coffee is made from nearly free of acid free Arabica beans to start with. They go through a purification process and are treated with a high pressure steam and vacuum procedure before they are roasted in way that takes out various harmful contents and irritants. These roasters note that the process is a very delicate one. If the bean is not roasted enough it will be like a green coffee bean and not taste good; and if the bean is roasted too much it becomes more acidic and gives a burnt flavor and or aroma to the coffee. How to Clean Different Commercial Coffee UrnsThere are many different kinds of commercial urns that need to be cleaned daily and weekly or bi-weekly. Daily cleaning for most of them remains about the same. Number one rule about cleaning urns: Never use chlorine bleach in any coffee urn. The chlorine will eat at the stainless steel and the silicone gaskets. Also, whether you are doing a daily cleaning or a bi-weekly cleaning never use soap, scouring powders, or abrasives of any kind to clean coffee brewing urns. Automatic coffee urns must be cleaned daily after the last batch using the following steps: 1- Drain the urn; then, run a brew cycle with just very hot water. After spraying hot water into the liner, thoroughly brush the entire urn with a long handled brush. 2-Drain the water and repeat step one. 3 – Wash the wire brew baskets with urn cleaner and rinse thoroughly. The same process is required for the double or triple urns after they have been used. Automatic urns must have a special scouring once a week. Scour the urn by first filling the urn and heat to maximum brewing temperature. Fill the liner with several gallons of water and add at least 1½ to 3 ounces of coffee urn cleaning compound. Set the thermostat to high; then, run a brew cycle of hot water. Allow the solution to remain in the liner for at least 30 minutes. Scrub the inside of both the liner and the cover with a long handled brush. Drain the cleaning solution from the liner. Rinse by running several brew cycles with the sprayhead centered over the liner. Be sure to drain the rinse water after each brew cycle. To clean the gauge glass tube, turn off the power and turn off the water line to the urn. Use a long, thin gauge glass brush to clean the coffee gauge glass. Use the same brush to clean the fitting at the bottom of the liner and into the pipe that is connected to the coffee faucet. It is an absolute necessity that Chinese hot tea urns, pour-over urns, midline and barista series urns need to be cleaned thoroughly at the end of each day. After spaying hot water in the stainless steel liner, thoroughly wash it with a soft brush using the hot water. Add one tablespoon of bicarbonate of soda to each gallon of water or you may use commercial urn cleaners. Commercial cleaners are not recommended for this type of urn. These urns should be turned off before each gauge glass should be cleaned with a hard bristle brush. Faucets should be taken apart and cleaned properly until fully clean. Daily cleaning for Midland urns and Barista series urns need to run through the brew cycle with hot water, brush the liner, drain the urn water again and repeat the process again. Wipe the liner covers and fill the liners with about one gallon of hot water to prevent coffee-oil burn-in. Weekly or bi-weekly urn cleaning depends on the amount of use. For regular use, the Chinese hot tea urns, midline heat exchange and pump urns and Barista Series require somewhat the same method. Where it varies for one urn, it will be noted at that step. Step 1: Fill the liners with about a gallon of hot water. For midline urns and space saver urns leave the thermostat on "Brew". Step 2: Pour into the liner the recommended concentration amount of urn cleaner that is recommended for that particular urn. An excessive amount of cleaner will attack the stainless steel causing deterioration of the coffee urn. Use cleaners which have been used successfully: DIP-IT by Economics Laboratories, OXYLITE by Avril, Inc., Syndet Division and TEMP-KLEEN by Caddy Corp. of America. Step 3: Scrub the liner interior with a large plastic brush, rinse and drain the liner. For midline and space saver urns follow Step 3a: Clean the gauge glasses with a long narrow brush. Step 4: Rinse with the liners empty and the electricity off, remove the coffee faucets by unscrewing the large plastic wing-nuts which fasten the faucets. Scrub from the opening into the center of the urn with a long brush. Step 5: Unscrew the top of the faucet from it body and scrub it thoroughly. Clean the silicone seat cup with a soft cloth and soapy water. Step 6: Reassemble the faucets. Fill the liners with hot water and drain until the liner and make sure all parts are completely rinsed. High speed brewing urns require a separate cleaning process because of the outer jacket. Step 1: When cleaning a high speed brewer, be sure the outer jacket is full of water. Step 2: Turn on the heat and fill the urn liner three-fourths full of water and use only urn cleaning compounds like those mentioned above. Step 3: Mix thoroughly and let stand for about 30 minutes. Step 4: Clean the gauge glass, faucet pipe, plugs etc. using a long handled brush. Be sure to clean the "lug nut" in the base of the liner. Step 5: Rinse the inside of the urn three to four times with hot water and scrub the urn each time you rinse. Step 6: Rinse all the parts well. Step 7: Leave a gallon or more of water in the urn. The amount of water depends on the size of the urn; the larger urns will need more water. Leave the cover partly open until the next use. If you used cold water, allow the urn to cool to prevent cracking the liner. Step 8: Clean urn baskets by dipping them in a solution of cleaning solution and then scrubbing them with a stiff brush. Rinse thoroughly and let dry. Each Sprayhead should be checked to see that all holes are open, if not, scrub with a stiff brush until all holes are open. These cleaning methods cover a number of commercial urns. Check with the manufacturer for specific details about your particular commercial coffee urn.
How to Clean Commercial Coffee BrewersCommercial coffee makers run from pod brewers to airpot and shuttle brewers to large urns. Each group has to be cleaned a certain way both daily and weekly or bi-weekly depending on its use. All cleaning should be done with the hottest water possible, which brings a word of caution for possible burns and a note this job should be done by professionals. A prime example of this is the pod brewer. If a pod brewer is used more than twice a day, then it needs to be descaled once every three months. Regular descaling of not only the pod brewer but all commercial brewers will prolong the life of a brewer; it will also guarantee optimal brewing results for a long time. Step one to clean a pod brewer: Fill one-fourth of the water reservoir with white vinegar, then fill with clean tap water up to the maximum line. Step 2: Place a 32 ounce container on the cup grate to catch the vinegar/water cleaning solution. Step 3: Activate the manual prime feature. Press and hold down the Brew button until about 9 ounces have been dispensed from the brewer. Step 4: Repeat this set two more times, making sure there is enough solution in the reservoir each time. Step 5: The unit will then heat up normally and the brew button will turn green, indicating that the water has reached brew temperature. One minute later the button will turn yellow. Step 6: Wait ten minutes, this allows the solution to sit in the tank at brew temperature. Step 7: Refill the water reservoir with cool, clean, tap water to the maximum line. Step 8: Repeat steps 2, 3 and 4 using the water that you add in step 7, to purge the cleaning solution from the system. Step 9: Refill the water reservoir to the maximum indicator line and the unit will be ready to brew coffee or tea. Grind and Brew coffee systems require daily cleaning of the cabinet and the warmers. The outside of the machine can be cleaned with a damp cloth, a household dusting spray or a stainless steel cleaner depending on the exterior of your grind and brew system. Do not ever use any abrasive as it will mar the finish. The warmer plate will maintain its appearance if cleaned regularly with a damp cloth for coffee stains. A detergent or sanitizer may be used for heavy deposits. For weekly cleaning, the slide valve under the cabinet hood should be wiped off with a clean dry cloth. Using finger tab open the slide valve with wipe the ground coffee from the inside of the spout, seal and slide valve. Use commercial grade urn cleaner as directed by manufacturer to clean the brew basket, airpots and decanters. Commercial brewers that brew into a decanter or airpot should wash the brew funnel, decanter or decanters by hand. Never use a dishwasher as it may cause breakage of the decanter or brew funnel. Clean all plastic and stainless steel surfaces whenever necessary with a damp cloth and mild soap. Rinse the items thoroughly and wipe dry. Be sure to avoid any strong cleaners which my adversely affect the plastic parts. Remove stains on stainless steel parts with a Scotchbrite pad. Never use steel wool as it will mar the finish. Remove the sprayhead with a nut or the sprayhead itself once a week to prevent lime build-up and clogging of the holes in the sprayhead. If the sprayhead has extra build-up, use a soft brush like a soft toothbrush to clean if needed. Shuttle brewers need to be cleaned weekly or bi-weekly depending on there use. To clean, fill the shuttle with a gallon of hot water. Pour the recommended concentration of urn cleaner into the shuttle liners. Do not overload as this will attack the stainless steel. DIP-IT and Oxylite are most recommended. Scrub the liner interior with a plastic bristle brush. Remove the knurled nut at the top of the gauge glass and clean the glass with a small bottle brush. Pour out the contents of the shuttle. Remove the handle assembly of the shuttle faucet by unscrewing the plastic bonnet. Gently wash the faucet shank with a bottle brush. Clean the warmer and bottom of the shuttle surfaces. These surfaces must be clean for proper heat transfer. Polish the exterior of the brewer with a stainless steel cleaner. Use the appropriate cleaner for brass, copper or vinyl if the optional finishes are present.
Cold Coffee DispensersCold Coffee Dispensers are cold coffee machines. They use a liquid to make the cold coffee drink. I have chosen to cover there coffee makers and tea kettles for this article. The coffee makers include the Presto 6 cup stainless steel coffee maker, the Presto 12 cup stainless steel coffee maker. These two coffee makers are better known as percolators. They are great for those who prefer a stronger cup of coffee. Included with these coffee makers is there Presto MyPod replacement coffee filters that are made for there 12 cup stainless steel coffee maker percolator. The Presto 6 cup brews from 2 to 6 cups of coffee fast and keeps it hot automatically. A signal light tells you when the coffee is ready to serve. While the horsepower of the first two is ½, the horsepower of this model is 1 horsepower. This machine is designed for constant heavy use where you’re consistently serving espresso or cappuccino style beverages such as at a coffee bar or espresso bar that is busy all the time.
The Venezia II espresso grinder has a micro "grind control" adjustment that allows the operator to set the grind size to the exact size desired. Toastess International Introduces Delfino BrandToastess International Introduces Delfino Brand The Toastess Coffee Company is one of the older coffee companies in America. Toastess Inc. was actually founded in 1945 by two brothers who became pioneers in the Canadian house wares industry. When it comes to coffee making products, Toastess was awarded a Canadian design award for its first electric kettle. This award was followed by these first with this product.
Toastess has many firsts in related electric house wares as well; all were first launched for Canadian consumers. In the early 2000s Toastess Inc. closed it doors and the brand was sold. In August 2000, Toastess International now takes great pride in the legacy of its predecessor. They have now set there eyes on new firsts. The latest new firsts is a design style change of coffee making equipment under a new brand name. Toastess International has unveiled the Delfino brand of upscale, brushed stainless steel small kitchen appliances. One of these products is the Delfino DLFC-381 Stainless Steel Coffee Maker 12 cup. This modern style coffee maker with an Italian name is very sleek with straight lines and precise balanced details. It has a removable water tank that sits across the back of the coffee maker that is easy to fill right from the tap and comes with a permanent coffee filter. This saves money, the environment and time from getting out the filters and putting them in the machine and taking the filter out and putting in the garbage. You can brew from 4 cups to all 12 cups. In two hours the warming plate will automatically shut-off as will the two hour keep warm function. A 24 hour programmable timer allows you set the time when you want your coffee made and will even allow you the first cup while it is still brewing your coffee with a pause and serve anti-drip device. Its safety features will automatically shut off the coffee maker water if it starts to boil or if it is dry and plugged in. A second Delfino product is the model DLFC-378 stainless steel 10 cup coffee maker/grinder combo that automatically brews the freshest cup of coffee. The coffee maker has the features of the DLFC-381 12 cup above. However, this combo grinds the beans then automatically brews the coffee for the freshest cup. The third product is the Delfino DLCG-559 Intelligent Grinder. This grinder has one-touch operation with 5 grinder settings and a cup slider control with 4 settings. Coffee ContainersThere are commercial and non-commercial uses for coffee containers. These containers are known as airpots, decanters, insulated carriers, air gap shuttles, and as a vacuum insulated container. Airpots come in two sizes, 74 ounce and 101 ounce. They may be double walled, which keeps coffee hot or cold for 24 hours or they may have a thermal glass liner that holds cold or hot liquids longer. Hot coffee in these airpots maintain there flavor and temperature for two hours or more. There lid with a black or orange push plate on top allows for easy recognition of the contents inside and is removable to make cleaning easy. The larger ounce airpot comes in a stainless steel finish with black trim. The 74 ounce is great anywhere you want to serve hot coffee to people who are waiting for your attention and there coffee at church social halls or guests at a gathering. The 101 ounce airpots are great for commercial purposes such as serving coffee to customers in a restaurant or banquet. The 74 ounce double walled airpot is great for convention and banquet tables. These pots swivel 360° and one push fills the cup to the top. Decanters are sometimes better known as glass coffee pots or carafes. They can hold from four up to twelve cups and may come with color coded tops of black and orange. Small home sized decanters usually come in white or black to match the owners décor. No matter the size, these decanters are great for the home brewer or for any commercial brewer that accepts them. These decanters can be found in restaurants, offices, lunch rooms and homes, apartments, or even motor homes. Insulated carriers and shuttles are meant to do just that. They are meant to be used to carry coffee to a satellite station. These carriers are insulated, 1.5 gallon in size and have a unique locking lid and carrier holder that keeps the carrier firmly on the brewer made to go them. An air gap shuttle is meant for the same purpose. They are also 1.5 gallon in size. Both were designed to bring the coffee to waitress stations or self-serve stations so customers can serve themselves. When coffee is low, replace with a new full carrier or shuttle from a main station. You can also brew a new batch into a new clean carrier or shuttle right there on the spot. The satellite brewers have large water tanks to brew another batch. A vacuum insulated container is double walled stainless steel decanter. They come is two sizes, a 1.9 (64.3 ounces) liter and a 2.5 liter (84.6 ounces). The hold the flavor and temperature of coffee much longer than the standard glass decanter. These go very well with a coffee brewer series or brew stations that have one or more warmers in an office lunch room, cafeteria or deli. Whatever your need is for serving coffee, any one of these can be a great asset to the server or the coffee drinkers. From the household decanter to the large carrier and shuttles, they all fill the need to get you or your customers’ cup of coffee or other beverage the best way possible.
